Chef Joseph Fistrovich
Chef Joseph Fistrovich knew he had a passion for serving great food since he was a young child working in his grandparents’ local tavern. He started bussing tables and washing dishes for them before later tending bar when he was able and doing the prep cooking.
After graduating culinary school in 1998, Joe moved to Las Vegas to chase his dream of becoming a chef. He started working at the Paris Hotel Eiffel Tower Restaurant, then went to work at Craftsteak at the MGM for Tom Colicchio. As a disciplined Sous Chef, he had the honor of being on the opening team of Bouchon at The Venetian led by renowned chef, Thomas Keller, from 2003-2006.
Afterward, Joe left the restaurant scene and moved to hotel food & beverage operations at The Rio and then to the JW Marriott in Summerlin as their Executive Sous Chef. In 2016, an opportunity led him to open The Pioneer Woman’s Mercantile for celebrity Chef Ree Drummond.
Now, Joe serves as Executive Chef at Choctaw Casino & Resort–Durant. His favorite part about being a chef is no matter what he’s cooking up, he treats each dish as if he’s serving his family.
